Avocado toast is a huge trend right now. It is really having a moment - and for good reason - it tastes great and it's good for you! Avocado toast is a delicious way to get healthy fats, amino acids and other nutritious benefits; especially when you add fresh produce to it like spinach for added fiber, potassium and magnesium. Here is a recipe for one that we like:
1/2 ripe avocado; halved, pitted & peeled
sea salt & pepper to taste
1 slice whole grain bread, toasted
1 clove garlic cut in half
1 t extra virgin olive oil
1 scoop PE Collagen
1 handful of baby spinach
Mash the avocado with back of fork. Stir in PE Collagen. Season with salt and pepper. Rub cut side of garlic on toast. Drizzle or brush olive oil on toast. Spread avocado mixture onto toast. Top with spinach. Drizzle any remaining olive oil over top and sprinkle with dash of sea salt. Enjoy!
