Chocolate Protein Mousse
Chocolate. Sometimes you just have to have it! This delicious high protein mousse is light and airy so it won't weigh you down.
1 c chocolate chips
1 scoop PE Mocha Collagen Protein Powder
1/4 c plus 2 T water
4 eggs
1/2 capful of vanilla
Preheat oven to 350 degrees.
Add chocolate chips and PE Mocha to a blender. Pulse to grind down the chips. Meanwhile, boil the water. Add the boiling water to the blender and blend until chocolate is combined.
Separate eggs. Add the egg whites to a large mixing bowl or the bowl of a stand mixer.
Add the egg yolks and vanilla to the chocolate and process to combine. Pour/scrape the chocolate mixture into a large mixing bowl.
Beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture one serving spoonful at a time.
Still working gently, spoon the mixture into a 1 quart (small) casserole dish. Bake for 12 minutes or until edges pull away from sides of casserole. It will still be gooey and jiggly in the middle.
Sprinkle with powdered sugar and serve with fresh berries. Enjoy!
