Pistachio Crusted Baked Chicken
This delicious and easy chicken is perfect for the whole family! It's also Keto & Paleo friendly.
1/3 c Linwood's Ground Flaxseed, Pumpkin Seed, Sunflower Seed2/3 c pistachios
1 scoop Protein Essentials Collagen
1 packet Stevia
1 t salt
1 t pepper
1 egg
1/3 c water
1 T olive oil
4 boneless, skinless chicken breast
Preheat oven to 425. Grease a wire rack and place it on a sheet pan. In a food processor blend the seeds, nuts, PE Collagen, stevia, salt and pepper until coarsely ground. You could also do this with a pestle and mortar. Place in a shallow dish and set aside. In another shallow dish, lightly beat egg and water until combined. Dip chicken breast in egg, then dredge through seed and nut combination, coating the chicken. Place the coated chicken on the wire rack. Drizzle with olive oil. Bake at 425 for 10 minutes, lower temperature to 400 for approximately 33 minutes depending on chicken thickness. Cook chicken to internal temperature of 165. Enjoy!
