Easy Protein Apple Crumble
This recipe makes three individual servings that are perfect for a weeknight treat. Maybe even an election night dessert! And if you have any leftover - apple crumble for breakfast. Bonus: you probably have all the ingredients in your pantry!
Filling:
2 medium apples
1 T coconut sugar
1 t cinnamon
pinch of nutmeg
splash of lemon
Topping:
3/4 c oatmeal
2 T brown sugar
1 T coconut sugar
2 scoops Protein Essentials Collagen
1/2 stick butter
Preheat oven to 350 degrees. Lightly grease 3 ramekins.
Cut the apples into a large dice. Add to a medium bowl. Sprinkle with coconut sugar, cinnamon, nutmeg and a splash of lemon. Mix until evenly distributed. Divide the fruit among the ramekins. Set aside.
In the same mixing bowl, add the topping ingredients. Combine with a pastry knife or two forks (or your hands) until it starts to come together somewhat. Sprinkle the topping over the fruit.
Bake for 20 minutes. Enjoy!
