Really! A delicious and healthy dip. Try this simple recipe for your next gathering.

2 1/4 c cooked lentils*, divided
1-2 garlic cloves, coarsley chopped
1/2 onion, coarsely chopped
1/4 c olive oil
Juice of 1/4 lemon
handful of fresh parsley, coarsley chopped
1/2 t salt
1 t pepper

Add 2 cups cooked lentils to food processor. Add garlic cloves, onion, olive oil, lemon juice, salt and pepper. Pulse until smooth. Add parsley pulse until incorporated. Add remaining 1/4 c lentils pulse once or twice. Add to bowl and enjoy with vegetables and french bread slices.
