Lentils
Lentils are a lovely little legume that are packed with fiber, protein and Vitamin B. This heart healthy legume has 230 calories per cup and very little fat. Lentils have a rich woodsy bite, making them perfect for salads, soups, stews and dips. There is no overnight soaking with lentils as there is with other beans, and the cooking time is a relatively short 30-35 minutes. They also freeze well as long as you take care to let them dry a bit.
Lentils Cooked in Protein Essentials Instabroth
1 package lentils
2 scoops Protein Essentials Instabroth, Chicken Flavor
4 c water

Rinse lentils, pick through to make sure there is no debris. Add 4 cups water to large saucepan over medium low heat. Stir in 2 scoops Protein Essentials Instabroth. Add lentils. Bring to boil, reduce to simmer. Simmer for 30-35 minutes until lentils have a soft bite; not mushy and not hard – almost like al dente pasta. Drain. Pour out onto cookie sheets covered in paper towels. Allow lentils to dry for several hours. Scoop lentils by the 1/2 c or 1 cup full into baggies to freeze.
